Pasta with 'nduja, a first course typical of Calabrian cuisine. It is a specialty based on 'nduja, a Calabrian product that is conquering the world. We are talking about a soft and spicy salami made from pork and chilli pepper typical of the Vibo Valentia area. It is also an excellent food as a condiment for pasta. The 'nduja has a strong and really tasty flavor. For this recipe we can use a choice of spaghetti, linguine, scialatielli, fusilli, rigatoni, penne.

Let's see how to prepare this spicy and appetizing first course quickly and easily. A first course based on pasta with a unique and decisive flavor.

Ingredients

To start our journey in Calabria to discover pasta with 'nduja we prepare the list of ingredients to use:

  • Pasta 400 g,
  • Tomato pulp 350 g,
  • 1 red onion,
  • 'Nduja 80 g,
  • EVO oil to taste,
  • Basil to taste,
  • Sea salt to taste

Now that we have all the ingredients we are ready to proceed with the preparation of the dish.

Pasta with 'nduja: preparation

The preparation of this first course is very simple. First we cut the onion and put it to fry in a non-stick pan with oil. When we see that it begins to brown, add 50 ml of hot water and the 'nduja. Before pouring the 'nduja into the pot, we proceed to free it from the casing and cut into small pieces. Then let it cook and pour another 50 ml of hot water when needed. Meanwhile, mix until the 'nduja melts. Finally we add the pulp of tomato and let it cook for a quarter of an hour over medium heat. We continue to mix from time to time.

So let's add the basil. Let's cook the pasta in boiling water following the cooking times indicated on the package. When the pasta is ready, drain it and toss it in a pan together with the sauce until it takes on flavor. At this point, our pasta with 'nduja is ready. So we can serve to arrange the pasta on the plate. We serve the dish hot. We can also serve it all with the addition of grated Parmesan cheese and a sprinkling of pepper.
