Pasta with sausage is a first course rich in flavor. There’s a version of this dish without tomato and it’s particularly tasty. In fact, it’s good for those who doesn’t like sauces and tomatoes in their dishes. We don’t use cream, which can be heavy. So for some this can be an innovative recipe. A delicious first course, with the taste of sausage. But it’s also a light dish. With simple explanations it’s easy to make even for the less experienced in the kitchen.

Ingredients

Ingredients for two people. You can vary the doses according to the number of guests. The ingredients are:

  • 200 gr of pasta (fusilloni),
  • 200 gr sausage,
  • olive oil,
  • half a white onion,
  • 1 carrot,
  • 1 celery stick,
  • half a glass of white wine (alternatively red wine),
  • salt and pepper,
  • parsley (alternatively you can choose basil or rosemary),
  • 4 tablespoons of grated cheese,
  • 1 glass of water or vegetable broth.

How to prepare pasta with sausage

We take a saucepan and pour some olive oil inside. Now add the white onion after having chopped it and let it fry on low heat. While preparing the sauté, we chop carrot and celery. So when we see that the onion begins to wilt we add the chopped carrot and celery and let it continue to fry everything on low heat. Meanwhile, we remove the sausage from the casing and add it to the sauté, crumbling the sausage very well. In the same way, let the sausage brown and wait until it turns completely white. Then let it all blend with wine. As we’ve already said, wine can be white or red. Let’s wait and let the alcohol evaporate.

So let’s add a glass of boiling water. Alternatively, you can use a vegetable broth. Finally we add the aromas that we have previously chosen. Chopped parsley or rosemary. Let it cook for 15-20 minutes.

Pasta with sausage: how to complete and present the dish

To complete the recipe we cook pasta. A few minutes before the end of the cooking, we drain the pasta and transfer it to a saucepan with the sausage. Then we mix the pasta and add some cooking water. Finally we wait for the pasta to be cooked to remove it from the heat. Then we add plenty of grated cheese and mix. Once finished we can serve our pasta with white sausage. If desired, you can add black pepper and grated cheese. It will be a success. Good to eat on Sunday with the family.
