Apart from the story, the dorsal portion of the pig from which the pork loin is obtained is quite extensive, in fact, it starts from the end of the capocollo, extending to the hips. Sometimes, the names of "arista" and "loin" are used improperly as synonyms. In any case, it is at the discretion of the "cook" to choose whether to use only the loin and separate any fillet or not.

Cooking the Arista

Pork loin is therefore a dish with extremely variable nutritional characteristics and easy to cook. To prepare this healthy food, for example, we can get 800 g. of pork, 2/3 pieces of carrots, sage, extra virgin olive oil, and a clove of garlic. You will also need half an onion, a little butter, 500 ml of milk, salt and pepper. It will be necessary to splint the pork loin with pieces of carrot and sage leaves, tying them with string. We will arrange everything in a pan with olive oil, garlic, onion, and adjusting the salt and pepper. At this point we will add butter, milk, cooking until the liquid is completely absorbed. Once cooked and cooled, it can be cut and served. You can also have some lager beer, and go about the same thing process, but replacing beer with milk.

Also interesting is the sirloin with oranges typical of Tuscany, where it is prepared in many butchers on the occasion of Christmas or other holidays. Citrus gives the meat a sweet and sour taste, very captivating and also tantalizing. In this case, it is better to take the pork loin with the bone, massage it with chopped garlic and rosemary. We will cut two oranges into slices, tying them to the meat. We will arrange everything in a baking dish with oil, salt and pepper. We will bake by adjusting the cooking, until the meat becomes soft and juicy. It is a good idea to add pancetta and flaked truffle instead in a variant.
