To make your dish you will need the following ingredients: 350 grams of spaghetti; 1 kilo of clams; garlic; salt; pepper; parsley; Cherry tomatoes; white wine, olive oil. This is the dose we recommend for 4 people.

The procedure to follow for the realization of the flow

As for the procedure, first of all take the clams and put them to drain in cold water and salt for at least 12 hours, in order to favor the elimination of the sand contained within them. Remember to change the water a couple of times to make sure there are no further impurities. Then put them to drain and in the meantime, in a pan, fry a clove of garlic cut into small pieces and add the clams and let them open. Once opened, remove them from the heat and remove the closed ones. Also, filter the water emitted by the clams and set it aside.

Then, in a pan, add the oil, a whole clove of garlic and the white wine. Then, evaporate the alcohol; to this add the water of the clams and boil. Add salt, pepper and the clams that you had previously opened. Meanwhile, in a saucepan, also cook the spaghetti. Once ready, drain and sauté them in the pan with the clams. Then, serve hot by combining the parsley and cherry tomatoes cut into small pieces.

To give your dish a more 'spicy' touch, you can add some paprika. In our recipe, we have suggested adding the cherry tomatoes in order to give an extra note of color to the dish. Alternatively, you can also add vegetables, such as courgettes; or, you can also add the tomato sauce or bottarga. Remember to choose the clams carefully, as they need to be of quality. Also, remember to clean them properly to eliminate the sand present using water and salt. Specifically, for every liter of water, you will need about 40 grams of salt. Avoid letting the clams touch the bottom, also because, in this way, it becomes difficult to remove the sand. If you want to shorten the time, you can use frozen clams, easily available in various supermarkets. We just have to wish you a good appetite!
