Donuts are very popular desserts during the Carnival period. Today we will reveal how to prepare the baked version with the custard.
Donuts
Soft, with a creamy heart and covered in sugar, donuts are one of the many typical Carnival desserts, although in reality they are available all year round. It is a loved delight precisely because it is a real bomb of delicacy. They are excellent for breakfast and can become a tasty snack that can sweeten the day. As for their origin, some argue they are Austrian.
Fact remains that in Italy they have had extraordinary success enough to spread throughout the Country (including islands). They are known by different names according to the region: for example in Rome they are known by the name of bombs; in Naples they are called staples and the dough also includes the addition of potatoes.
Variants
There are two variants: fried and baked (the former certainly more caloric). Inside they can contain, despite the classic custard, also jam. Obviously everything will depend on your personal tastes.
Baked donuts filled with cream: ingredients
These are the ingredients for your donuts: 250 g of Manitoba flour; 250 g of 00 flour; 200 ml of whole milk; 80 grams of butter; 8 grams of brewer’s yeast; 1 egg; 1 sachet of vanillin; 60 grams of sugar; the grated peel of a lemon (or alternatively an orange); caster sugar (or icing) to sprinkle the donuts. For the custard, however, you will need: 75 grams of wheat starch; 175 grams of sugar; 2 egg yolks; 50 grams of butter; half a liter of whole milk; 2 sachet of vanilla.
Baked donuts filled with cream: procedure
First, take a large bowl and put the milk, then add the brewer’s yeast by crumbling it. Stir until the yeast dissolves. Then add the two flours (Manitoba and 00) and continue to work everything. Add the grated peel of half a lemon, the sugar, the sachet of vanillin and finally the butter that you had previously softened to the mixture. Continue to mix everything until all the ingredients are well blended.
Then let the dough rise in the bowl until it has doubled. Create discs of about ten centimeters and having a centimeter of thickness. Arrange them in a baking tray lined with parchment paper and let them rise for at least 40 minutes. Then bake them for about 15 minutes at 180 degrees. Once ready, fill them with custard and sprinkle with granulated sugar or icing sugar.
How to make custard
Take the two eggs and separate the yolks from the whites. Pour the milk into a saucepan and heat it, without boiling it. In another bowl, however, beat the egg yolks with the sugar and vanilla until you get a sort of light cream. Pour the starch gradually and continue stirring until everything is well mixed. Now add the milk that you previously heated to the mixture and continue to mix. Take your mixture and put it on the stove over a low heat and stir. Add the butter and continue to mix well with a whisk until thick. As soon as it is well blended, remove your cream from the heat and let it cool. Enjoy your donuts!
